I added a video to iTunes. Why is it not appearing in my iPod (iPhone)?

Most likely, video synchronization is disabled in your iTunes. To turn it back on, do the following:
1) Start iTunes.
2) Select your iPod (iPhone) from the Devices tab of the left panel.
3) Click Movies on the top panel.
4) Enable the "Sync Movies" and "Automatically include all movies" options.

Why did the conversion process reach 90% and then stop?

This is perfectly normal. It can last for hour if you are converting a very large file.

Why when playing my files I don't have sound (video)?
